Lab Grown Salmon

A growing number of Americans are now tasting the future of seafood, as lab-grown, cell-cultivated salmon rolls out at select restaurants across the US — including Portland, Austin, San Francisco, and Seattle.

San Francisco–based food tech company Wildtype is behind the innovation, with their FDA-approved coho salmon now appearing in gourmet dishes. While some praise the development as a major win for sustainability, others argue it’s a high-tech distraction from the real crisis in wild salmon populations.


From Steel Tanks to Fine Dining

Wildtype produces salmon by cultivating real fish cells inside large stainless steel tanks — similar to how craft beer is brewed. No animals are killed in the process, and the end result is raw, sushi-grade salmon.

Their debut dish launched at Kann in Portland, a restaurant led by chef Gregory Gourdet, where the cultivated salmon is paired with pickled strawberries and spiced tomato in a modern, seasonal presentation.

Chef Gourdet said, “Introducing Wildtype’s cultivated salmon hits the elevated and sustainable marks we want our menu to offer guests who share a similar value system.”


High-End Rollout Continues — But Time Is Ticking

Wildtype’s salmon also landed on the menu at Otoko in Austin, Texas — a luxury omakase restaurant with tasting menus priced up to $250 USD. But due to a state ban on cultivated meats coming into effect next month, the product will only be available there for a limited time.

“It’s awesome,” said chef Yoshi Okai. “You don’t have to kill the fish anymore — and it tastes like the real thing.”

Soon after, San Francisco’s Robin and Seattle’s The Walrus and the Carpenter added the product to their menus. Chef Renee Erickson from Seattle said the salmon is “dense, fatty, and delicious… mind-blowing that it actually is salmon.”


A Response to a Real Crisis?

California has now canceled its commercial salmon season for three straight years due to critically low fish populations. Factors include water pollution, river damming, and unsustainable farming.

Arye Elfenbein, Wildtype’s co-founder and a former cardiologist, says his mission is about relieving pressure on ecosystems, not replacing them.

“We grow the cells using nutrients like sugars, fats, amino acids — the same things salmon would consume naturally,” he said. “We never wanted to compete with conventional fishing or farming. It’s a complementary solution.”


Environmentalists Push Back

But not everyone agrees. Save California Salmon executive director Regina Chichizola argues that this biotech solution sidesteps the root issue — protecting natural rivers and ecosystems.

“We’re pretty opposed to cell-grown salmon,” she said. “If we can’t keep waters clean enough for wild salmon to survive, what does that say about our future — even our drinking water?”

She added that some species, like spring salmon, have seen up to 90% population declines in just the last decade.

Chichizola advocates for restoration over simulation: removing dams, protecting watersheds, and reconnecting people to the rivers that nourish their communities.

What Comes Next?

As debates continue, Wildtype is gearing up for more restaurant launches and exploring supermarket potential in the future. For now, their salmon remains a high-end, chef-curated experience — and a signal of where food might be heading.

One thing’s for sure: whether you’re team “tech saves the oceans” or team “protect the wild,” the conversation around the future of seafood is heating up — and Wildtype just poured fuel on the fire.
